Summer Salad Love.


I'm a salad addict. I enjoy eating several of them a week, I pray I never get sick of them. Not sure what I'd eat! There are 2 types of people in this world - ones that like a salad with berries in it and ones that think that's disgusting. I get it, I have plenty of odd dislikes. *Ahem* won't touch seafood because sea creatures freak me out. 

I'm a berry in my salad kind of girl though. 

I love throwing stuff together and creating recipes that become staple foods in my diet. So I thought I'd share a favorite lunch of mine, for team berries in yo' salad. 


Healthy Eating

What I use: 
(I track my food, so these are just the measurements I use)

2 oz Lettuce
.5 oz Spinach
25g Blueberries
30g Raspberries
30g Strawberries
1/4 C (65g) Garbanzo beans
1/4 C (56g) Low fat cottage cheese
1 can of chicken, drained *I mix the cottage cheese & chicken together then add to salad
2 Tbsp Raspberry vinaigrette dressing
Topped with a serving of sliced almonds and 1/2 serving of Snapea Crisps

Healthy, light & simple! It's a big and very filling salad too, don't let the pic fool you. Served with a side of Fruit Punch Spark too of course.

Calories: 361
Carbs: 38g
Fat: 9g
Protein: 34g
Fiber: 12g

  4. love adding berries to my salad! fun fact - when i'm being good that is, i'll go to panera and get their basic salad and a fruit cup and throw that on top of the salad! or you can really do it anywhere. makes it so much yummier :) xo

  7. I love berries in my salad too!!! Those snap peas are so damn addicting. I dont put them in my salad. Mainly because I can basically eat the entire bag as a snack before ever making it to my salad bowl hahaha/

  11. I have eaten a salad every day for lunch for the past 13-14 years :) I'm obsessed! I'm weird - sometimes the fruit grosses me out and sometimes I love it - I guess it just depends on which salad it is!! This one looks DELISH!

  15. yeahhhh berries in salads is SO weird. hahahaha. sometimes i will eat fruit in my salads, but they have to be super basic salads, you know? otherwise i just load up on veggies. it's been ages since i've had a salad! the scale definitely notices lol

  23. Yeah, I'm one of those weirdos who can't do berries in the salad -- unless you count dried cranberries, then yes, please give me all of those! BUT, this sounds like a super yummy salad and maybe, just maybe I'll go out on a limb and give it a whirl. After all, you haven't led me wrong yet ;)

  25. I LOVE berries in my salads! I keep: raisins, nuts, apples, and goat cheese/feta at home pretty much at all times. Then I just need spinach and chicken to make a yummy and large salad for dinner. I usually make a homemade dressing with oil, vinegar, mustard, a little honey, and salt and pepper. So easy and so good! I need to try those snap peas!
