I'm a salad addict. I enjoy eating several of them a week, I pray I never get sick of them. Not sure what I'd eat! There are 2 types of people in this world - ones that like a salad with berries in it and ones that think that's disgusting. I get it, I have plenty of odd dislikes. *Ahem* won't touch seafood because sea creatures freak me out.
I'm a berry in my salad kind of girl though.
I love throwing stuff together and creating recipes that become staple foods in my diet. So I thought I'd share a favorite lunch of mine, for team berries in yo' salad.
What I use:
(I track my food, so these are just the measurements I use)
2 oz Lettuce
.5 oz Spinach
1/4 C (65g) Garbanzo beans
1/4 C (56g) Low fat cottage cheese
1 can of chicken, drained *I mix the cottage cheese & chicken together then add to salad
2 Tbsp Raspberry vinaigrette dressing
Topped with a serving of sliced almonds and 1/2 serving of Snapea Crisps
Healthy, light & simple! It's a big and very filling salad too, don't let the pic fool you. Served with a side of Fruit Punch Spark too of course.
