Healthy Eats || Creamy Chicken Zucchini Skillet


Recently I tried zucchini & squash for the first time. Yes, you read that right. I'm a recovering insanely picky eater, but happy to report I've made major progress... Things I used to not eat and now can't get enough of- avocado, zucchini, squash, asparagus & onion. Things I still struggle with- seafood & mushrooms. Seafood I'm working on, mushrooms I believe I legitimately do not like. 

Anyway, I recently threw this together one week night and decided to share because we both loved it. It's easy, healthy & filling. Can you tell by now those are my favorite types of recipes?

Creamy Chicken Zucchini Skillet

Ingredients:
serves 2

1 zucchini- washed, peeled & chopped
1 yellow squash- washed, peeled & chopped
1/2 cup chopped onion (I used sweet vidalia) 
5 oz cherry tomatoes, cut in halves
4 chicken tenderloins, cubed
2 cloves fresh garlic, minced
Seasonings of choice
2 Laughing Cow Creamy Swiss Light wedges

Combine chicken cubes, garlic and onion in a skillet and cook until chicken is done and onions are soft. Season the chicken a couple of times as it's cooking with your favorite seasonings. (I always use pepper, Greek Seasoning & Mrs Dash Garlic & Herb) Add in the tomatoes, zucchini & squash. Cover skillet and cook for about 10 minutes on medium low heat, stirring 1-2 times. Once the zucchini & squash are soft, toss in the 2 Laughing Cow wedges. Stir and cook long enough for them to get creamy, about 2 minutes. Dish it out & enjoy! I tossed a little fat free mozzarella cheese on top of ours and made side salads.

  1. I love subbing in Laughing cow cheese into recipes (especially if Mark isn't around to see me do it)! Such a great way to get that creamy base without all the calories. Great recipe!!!

  4. Love that Laughing Cow cheese, it's so good. I'm with you on the mushrooms too. I only eat them when they're mixed in with other things or on a burger. Otherwise I can't stand the texture. Anyways... This also looks good, and perfect for during the week. Thank you for sharing! :-)

  7. haha i am totally a recovering picky eater as well. i really struggle with zucchini and squash but i'm trying. i would love to try this maybe without the chicken hahaha. which is kind of pointless, i know. maybe with chickpeas. yum.

  15. Are we twins? I used to not eat ANY of those things you listed above either but have experimented with them over the last few years and love them all. And I too am working on seafood and mushrooms. I have discovered that I love sushi (have for several years now) and like really good fish like Mahi and Amberjack. Mushrooms are something that I still cant get down with no matter how I try them. Its fungus. haha! I will eat the little pieces in miso soup or whatever but that is about it.

  20. LOL we are seriously the same person - I legit didn't try zuchinni until I was like 28, and now I love it. My husband has broadened my palette so much. Before him, I never ate much outside of my comfort zone. Now, I love all sorts of seafood and veggies and even odd fruits like starfruit. I'm currently eating mushrooms over quinoa for lunch, they aren't that bad I promise! lol I prefer baby bellas. I bake them with some lemon juice, parmesan, pepper and olive oil and add them on top of quinoa. You can't even taste them! :)
