Easy Breakfast Casserole || Low Carb, Low Fat & High Protein.


Another Monday is here friends, how was your weekend? We had some gorgeous weather here in Oklahoma, we made sure to enjoy it.

I've talked about how we're big meal planners & food prep people in our house, we just have to in order to stay on track throughout our busy week. Some weeks I will make ahead a breakfast for the week- casserole, quinoa egg muffins, blueberry muffins, etc. Recently I've been throwing together this breakfast casserole that really could not be any easier. It's tasty, easy, filling and low carb/low fat/high protein. So for us, a total win.

Meal Prep

Ingredients:

1 cup turkey sausage crumbles
3 cups frozen hash browns 
1/4 cup fat free cheddar cheese
1/4 cup fat free mozzarella cheese
16 oz carton egg whites
Seasonings to taste

Preheat oven to 350, spray an 8x8 baking dish with non-stick spray. Mix the hash browns & sausage together in the pan. Pour the egg whites on top and add any seasonings you'd like, stir. Add your cheeses on top. Bake uncovered for 1 hour.

See, honestly the easiest thing ever! I like a little salsa on top of mine too. We cut this into 4 pieces, you could divide it however you'd like, we're into big servings around here. An entire 1/4 of the pan only has 167 calories, 2.5g fat, 11g carbs & 21g protein

You can customize this several different ways- add real eggs for more fats, use regular cheese for more fat, use any kind of sausage, add veggies. The possibilities are endless. Enjoy!

  3. This sounds so good (and easy)! I've never tried any of the pre-cooked breakfast meats, but it would make things a lot faster in the morning!

  11. OMG this looks delish and I can't believe how low in calories /fat/carbs it has! I also love that it can be made ahead and you have it ready to go for the week, since I'm often guilty of grabbing something unhealthy due to lack of time. Can't wait to try this!!

  14. This looks so easy and delish! I am definitely making this. I am always rushing in the morning and Taylor eats cereal most days. If I make this ahead of time and heat it for her it will be pretty easy and healthy. Thank you for sharing this!

  23. Yum! Russ and I love breakfast! We often make a crustless quiche that has some whole wheat flour in it and lots of veggies for dinner during the week. He likes eggs a lot, so it's an easy thing to make.
