A Snickerdoodle Recipe, for 2!

Raise your hand if you have a sweet tooth and love cookies but you never make a batch of cookies because you'll eat them all. Ever single one. In one sitting.

This post is for you.

Cookie in a mug

Sometimes my our sweet tooth is raging, but I refuse to bake an entire batch because well, we don't need an entire batch. I'm a big fan of the Cookie in a Mug. Just 1 cookie, it's perfect! Confused? Recipe and Info below, thank me later.

Snickerdoodles for 2

2 tablespoons butter, melted
1 tablespoon brown sugar
2 tablespoons white sugar
1 good size pinch of salt
1/2 teaspoon vanilla
2 egg yolks
6 tablespoons flour
2 heaping tablespoons white chocolate chips
sugar & cinnamon mixture (See pic below, or mix up own)

In a small bowl, melt your butter. Stir in both sugars, salt and vanilla. Stir in egg yolks. Then add in your flour, mix well. Mix in your white chocolate chips. Divide mixture into 2 mugs, sprinkle sugar & cinnamon mix all over the top. Place them in the microwave together for a minute and a half, or until they're a cookie-like texture! Eat up.

Once they're done, get ready....

Going.

GONE!
Cookie in a mug
(I promise, hubby ate one too. Or did he? You'll never know...)

And that my friends, is how you curb that cookie craving without the regret of a dozen cookies and chocolate smeared all over your face.

Don't like snickerdoodle? The possibilities are endless- we like peanut butter chocolate chip too. Just add a heaping tablespoon of peanut butter, sub 1 tablespoon of white sugar for a teaspoon and use regular chocolate chips.

Only 1 of you? Cut the recipe in half.

What kind would you make?

  13. I also have that white Anthro mug (with a P on it, of course) and it's my absolute favorite mug! Don't shoot me, but I do not have anything resembling a sweet tooth. I know, I'm the only woman on planet earth that lacks one... But sugar and I don't get along! I'm pretty much an alien. These look great though, and I'll give it a try for my sugar-obsessed husband!
