Springtime Food Love + Monthly Focus

 Morning loves, hope you all had a great weekend. We had the warmest weather we've had so far here in Oklahoma, it was in the 90's! Not sure I'm ready for this just yet…

Friday night I whipped up a dinner that turned out way too good not to share, Dustin and I both loved it. It's so simple and delicious and the salad made it the perfect dish for spring or summer. I enjoyed a big glass of lemonade with mine, enjoy!



Panko Crusted Chicken
-Created a mixture of panko, basil, garlic and fresh Parmesan cheese
-Rolled chicken tenderloins in egg, then panko mixture
-Baked on cookie sheet for 20 minutes on 400

Roasted Sweet Potatoes
-Diced up 3 sweet potatoes, spread out on a cookie sheet
-Drizzled with olive oil and tossed
-Sprinkled a dash of salt, then cinnamon all over them
-Drizzled honey all over them
-Baked for 30 minutes on 400

A Fruit & Greens Salad
-Mixed up Romaine lettuce, spinach, sliced up strawberries and blueberries.
-Topped with Newman's Own Lite Raspberry & Walnut dressing

As always, Pixie took position under the table to wait for a bite. She got a bite of sweet potato and she definitely  approved!

May- Do something that matters. Let me explain. Each month I feel like I'm on repeat. Sleep, workout, cook, work, blog, be super busy. This month, I want to do at least 1 thing that actually matters. Do something nice for someone, volunteer somewhere, help someone in need, donate my time or money, etc. Whatever it may be, I'm not sure yet. I'm asking God to open my eyes and guide me. I want to do something that matters and makes a difference, to someone other than me. Big or small.

But let me also say, you do way more than you realize when it comes to doing something that matters. Seriously, the gift of your friendship is huge in my life & it matters in a big way to me. :)

  4. You are so wonderful. I LOVE your focus this month. We can so easily get caught up in the daily grind, taking time out to be used by Christ in a meaningful way is beautiful! I may have to sneak this in for myself as well.
    PS. That salad screams Summer and I'm loving it! I laid out on my porch this weekend and roasted. It was perfection!

  10. My favorite salad is an unhealthy salad...that is, fried chicken. but when i am eating healthy i like olive oil and vinegar, a little green onion, tomatoes...pretty typical on my italian table.

  12. I LOVE Panko crusted chicken! My mom used to make it a lot, and it's been something I've been meaning to try on my own. This meal is one I could eat several nights in a row and not get tired of. :)

  13. I love Panko on chicken and the side dishes look amaze. If the dog approves, you know it's good ;) We tend to have a grilled chicken/goat cheese/apples/walnuts/Romaine with a simple homemade vinaigrette on repeat at our house. Good for you in wanting to do something for someone else. It's so easy to get wrapped up in our own routines, for sure. I'm thinking I need to do another big purge/Salvation Army giveaway! Happy Cinco ;)

  15. I was in the middle of typing a comment and the little comment box just refreshed itself! I've never seen anything like it! haha... but that food looks delicious! I have to force myself to eat salads because I'm really picky about the texture of the leaves, but I LOVE fruit in my salad-- strawberries, oranges, berries-- soooo good! Also a huge fan of breaded or crusted chicken! I feel like it's so easy to do but makes the chicken seem a little more fancy, or something? I love your focus for the month-- I meant to link up for this month but I still can't decide what I need/want to focus on this month!

  21. It's amazing how much volunteering affects your spirit, it really is a win-win for everyone involved. I highly recommend getting involved with a local organization! Quinoa salads have been my obsession for years - spinach, muchroom, asparagus and feta is my go-to. So good!
